Recipe || Jam Thumb Print Biscuits (Egg Free)

I was in the mood of a spot of baking but didn't have any eggs, so that limited my choices of what to make. After a brief searching for egg free recipes I came across the recipe for Jam Thumb Print Biscuits. Now I have previously made these and really liked them but the recipe I used included eggs, so I was intrigued to see how they would turn out without eggs.

Jam Thumb Print Biscuits
Makes: 2 dozen Time: 25 minutes

What You Need: 
500g Softened Butter
200g Caster Sugar
510g Plain Flour
1 Teaspoon Vanilla Extract

* Preheat the oven to 180 oC
* Mix the softened butter with the sugar and add the vanilla extract.
* Stir in the flour, this should start to create a dough.
* Mix with your hands to create a large dough ball.
* From that shape 2cm balls and flatten out (about 1cm thick) on to a baking tray.
* Indent the biscuits with your thumb, be careful not to go through and make a hole or else the jam will not hold.
* Bake in the oven for about 10-12 minutes, until lightly brown.
* Remove from the oven and fill the thumbprints with jam immediately.
* Leave to cool.
* Once cool enjoy with a cup of tea :)
